Round two for On the Menu Monday!
This week, I'm showcasing one of our new favorite meals...
Mexican Sausage Skillet.
It's from a Pampered Chef recipe book, so I can't share THAT recipe with you, but I did find one that was pretty close.

But, here's pretty much the recipe...
1 cup uncooked long grain white rice
1 1/2 cups corn (fresh or frozen) - I like fresh though, YUM!
1 cup chopped onion
1 lb smoked sausage (I think i used andouille and it was still yummy!)
2 garlic cloves
2 cans diced tomatoes with green chilies
1 can black beans
1 tbsp lime juice
**** I added some southwest seasoning, to give it a little kick
Cook rice according to package directions
Cut sausage into 1/2 inch pieces
Lightly coat skillet with non stick cooking spray. Add Corn to skillet. Cook without stirring over medium hear 4 to 6 minutes or until carmalized on one side. Add onion, sausage and pressed garlic. (Here is where I also added the seasoning).

Stir and Cook 3 to 4 minutes or until onion is tender.
Add tomatoes and beans bring to boil for 5 minutes
Serve over 1/2 cup of rice

Also, I have had many people ask about my menu...
It's something I've been making over the years... I'm still tweeking as time goes on though.
I have two weeks worth of dinners planned (and on some of the lines, I just put PIZZA...or dinner out - so I do plan on those things.) And I write page numbers of the books I found them in, or put a "P" if the recipe is on my pinterest board. Then I start writing all the ingredients I need and whatever odds and ends I need. When I go shopping, I have it tri-folded to where I see both of the shopping list sides, but I still have the menu list with me when I'm shopping so I can refer to it for whatever reason. Then, when I get home, I refold the paper, so the menu sticks out and I hang it on the fridge with the menu facing me. It works. I like it. haha.

Oh my! I wish I was that organized. When, I go to the store I wander around until I find something that looks good. My fiance doesn't eat dinner with me either, so it is hard to plan by myself. Thanks for the planner, I will have to try to be more organized. :)

This is going to come in GREAT handy over the week! Right now, we're just writing down what we need, and it's difficult going through the grocery store from area to area and missing some things that were back at the beginning! I love the way this is organized so I can go from section to section in the grocery and not miss a thing.
